"Lover": Taylor Way
Taylor is my cousin, best friend & roomie. We live together in NYC. I love her lots. One of my favorite parts of living with Tay is that she's an amazing cook and even better - she kills it with my vegan lifestyle. Vegan Fettucini Alfredo? Check. Vegan Mac n' Cheese? Done. Chickpea "tuna" sandwich? Everything. The list goes on.
So for her "lover" post, it obviously had to revolve around food. Since it's me, that food was going to be pizza and because it's me, there was going to be lots of pizza. So $16 and an hour later she made:
"THE BEST VEGAN PIZZAS"
Notes from Taylor:
To keep things simple get pizza dough from Trader Joes. As you're taking the dough out, gently grab onto the edge of the ball. Continue to rotate the dough while the edge begins to drop off a bit. This will grow the dough into the circle for your pizza.
Besides that, don't get too technical about shit
Preheat oven to 500.
Simple Red Sauce:
1 clove of minced garlic stirred into:
1 can of tomato sauce
Add Tbsp of tomato paste to make it thicker. (Skip this if you prefer it thinner)
Cashew White Sauce:
2/3 cup cashews - boil for 15 minutes, then put in food processor with a a tbsp of left over water and add the following:
2 cloves of garlic
1 Tbsp of nutritional yeast
Onion powder to taste
Couple pinches of salt to cover surface
If it's as thick or thicker than hummus add a dash of almond milk - puree again
Toppings White Pizza:
Brocollini - (Blanch it: boil until bright green, about 4-5 minutes then place in ice water until ready to use, then drain & pat dry.)
Toppings Red Pizza:
On medium-high heat: Saute 1/2 an onion & 1 clove minced garlic in avocado oil for 2-3 minutes.
Add in 6 baby bella sliced mushrooms then 3-4 minutes after:
Add 1/2 bag+ of spinach
3-ish pinches of salt to cover veggies
Place on side dish until ready to top pizza.
Once sauce and toppings are done, place raw dough on pizza stone or baking sheet, lather with sauce & top with veggies.
*If you have extra cashew sauce add some dollops on top veggies
Place in the oven and cook for 10-15 minutes or until crust is golden (cook longer for extra crunch)
